the not so age old question

Jose Villa is a hero of mine. I try to emulate his work, but as he says here, why spend all your time post processing, trying to make digital look like film when you can just shoot film? I do often look back on my film images, when I didn't know nearly as much as I know now about light and manual shooting, yet those images are soft and lovely nonetheless, and have a quality I still cannot mimic today.

So it makes me beg the question...

Why not?
